Memories Coffee Lounge & Restaurant is situated in the heart of Midstream Medical Centre, where we honour our elders, and present our passion for food to the greater Midstream and beyond.

Why Memories?

We want to take you back to this special place and create new memories every time you visit.

We experience a whirlwind of emotions when we think about grandma’s kitchen and mom’s cooking! Friends and family, all joined around the dining table while feasting. Pure happiness! It is sometimes just a faint aroma of a special food memory that will take you back to a happy place from the past, whether it is a dish, a sauce or just the smell of Ouma in her kitchen. We want to take you back to this special place and create new memories every time you visit. Whether you sit down to enjoy one of our delicious meals, or you select some of our own hand-made delicacies from the shelves, our goal is to make new friends and create new food experiences, that will become tomorrow’s memories.

Wayne Walkinshaw

Executive

He started his career as waiter and landed his first chefing job at Reef food services, as assistant chef to the executive dining room and have not looked back since.

He has travelled extensively and is fortunate enough to have gained experience from the US, UK to Zanzibar as well as highly acclaimed South African hotels, including Walkersons Country Manor & Spa and Cybele Forest Lodge & Health Spa, which was voted one of the top 50 small luxury hotels of the world, whilst enjoying global recognition as one of the first members of the prestigious Relais & Chateaux Association in Southern Africa.

He has a passion for delicious cuisine and a penchant for adding a modern flair to popular traditional dishes. He enjoys creating unique and delectable experiences for diners, using only the finest local and imported fresh produce, incorporating pure and crisp flavours

Dries is a fanatical traveller and will go anywhere at any given time to explore new places, new cuisine, and new friends.His passion for food was born in his childhood home and was refined when he worked in hotels across Southern Africa.Entertaining others is like oxygen to his soul. He loves to surprise people with something new and something special, especially if it can be paired with a glass of red wine.

Memories will give him countless opportunities to entertain, and to give a little of himself to our new friends.

Erna’s love for fine art led her to become a chef. Food not only have to satisfy your palate, but it must also surprise and entice visually.
She also developed a passion for healthy food, and enjoys helping people to reach their goals, while still enjoying great food!
A people’s person by heart, she loves all people! From babies to our elders,  who she believes should be treated like kings and queens, having gained countless life experiences, and contributing to life as we know it.

With over a decade of chef experience, he offers a unique blend of leadership, vision, and knowledge of the restaurant industry. His curiosity about food related things was piqued during a different career. After graduating from HTA Culinary School in 2000, he embarked his adventure to top culinary destinations in South Africa, where his love and knowledge for cooking continued to grow.

His passion lies in traditional South African dishes, with some Asian and African influences. He aims to perfect every dish leaving his kitchen, to inspire those who sits at his table.
